If you have your heart set on a day of the week (such as a Saturday evening), it is much easier to secure the date that you want in the winter rather than in the summer months. Having your wedding in the winter gives you much more date flexibility compared to trying to book any other time of the year, and it will also be easier for your guests to find overnight accommodations if they need to book them as well.
